Lemon cookies are Jen’s favorite. Laura, one of Jen’s dear friends introduced via Mark (co-worker at Quotient) made these for Jen in the heart of COVID, when all friends were delivering pick-me-ups.
Ingredients:
- 1 box lemon cake mix
- 8 oz. Cool Whip thawed
- 1 egg
- Powdered Sugar
Instructions:
Preheat oven to 350 degrees and grease cookie sheets. Combine cake mix, Cool Whip, and egg and stir until combined.
Place powdered sugar in a shallow dish. Roll dough into one inch balls and roll them completely in sugar. Place on cookie sheet 2 inches apart.
Bake for 8 minutes or until edges are lightly brown. Allow cookies to cool on baking sheets for 2-3 minutes before placing on cooling rack.
