Mom’s Cream of Chicken Soup

Momma Martin’s famous cream of chicken soup. Best on a cold night, when sick, or when I need a taste of home. While I’ll never be able to replicate it perfectly, the recipe helps me try. 

Ingredients:

  • 1/4 cup butter or margine
  • 1/4 cup all-purpose flour
  • 1/2 cup milk
  • 1/2 cup of heavy cream
  • 3 cups of chicken broth
  • 1 1/2 cups finely chopped cooked chicken (may need to add chicken bouillon cubes for flavor)
  • dash pepper
  • Amish noodles

Directions:

In a large saucepan melt butter or margarine; stir in flour. Stir in milk, cream, and broth. Cook and stir till mixture is slightly thickened and bubbly; reduce heat. Stir in chicken and pepper; heat through. Garnish with snipped chives and parsley; if desired … we prefer just Club buttery crackers instead.

Makes 4 servings.
