Became a favorite at Lake Loreli (thank you Reid family for inviting us) where we spent several weekends making memories in the sun.
Ingredients:
- l lb. pasta, cooked, spiral or penne
- 1/4 lb. provolone cheese, or mozzarella, cubed
- 1/4 lb. pepperoni, cubed
- 1/4 lb. salami, cubed
- 2 green and red peppers, chopped
- 4 green onions, or 1 small onion, chopped
- 1 pint grape tomatoes, halved
- 1 jar green olives, sliced
- 1 can black olives, sliced, pitted
- 1-2 cloves garlic, minced
Dressing:
- 3/4 cup canola or vegetable oil
- 1/3 cup red or white wine vinegar
- 2 tsp. salt, or garlic salt
- 3/4 tsp. pepper
- 1 tsp. oregano, or Italian seasoning
Directions:
Mix dressing ingredients. Toss with all ingredients. Chill, toss again. Save a little dressing out and re-toss salad before serving.
