Momma Sooz’s Italian Pasta Salad

Became a favorite at Lake Loreli (thank you Reid family for inviting us) where we spent several weekends making memories in the sun.

Ingredients:

  • l lb. pasta, cooked, spiral or penne
  • 1/4 lb. provolone cheese, or mozzarella, cubed
  • 1/4 lb. pepperoni, cubed
  • 1/4 lb. salami, cubed
  • 2 green and red peppers, chopped
  • 4 green onions, or 1 small onion, chopped
  • 1 pint grape tomatoes, halved
  • 1 jar green olives, sliced
  • 1 can black olives, sliced, pitted
  • 1-2 cloves garlic, minced

Dressing:

  • 3/4 cup canola or vegetable oil
  • 1/3 cup red or white wine vinegar
  • 2 tsp. salt, or garlic salt
  • 3/4 tsp. pepper
  • 1 tsp. oregano, or Italian seasoning

Directions:

Mix dressing ingredients. Toss with all ingredients. Chill, toss again. Save a little dressing out and re-toss salad before serving.
