Ingredients:
- 1 lb. ground beef
- 1/2 cup chopped onions
- 1 pkg. taco seasoning
- 3/4 cup of water
- 1 cup shredded cheddar cheese
- 1 cup shredded lettuce
- 1. 5 cups chopped tomatoes
- 1 3/4 to 2 cups flour
- 1 pkg. Red Star quick rise yeast or active dry yeast
- 1 tbsp. sugar
- 2 tsp. finely chopped onion
- 3/4 tsp. salt
- 2/3 cup warm water
- 2 tbsp. oil
- 1/2 cup crushed corn chips
Directions:
Heat oven to 375 degrees. In medium bowl, combine one (1) cup flour, yeast, sugar, onion, and salt; mix well. Add very warm water and oil to the flour mixture. Mix by hand until almost smooth. Stir in corn chips and enough remaining flour to make stiff batter. Spread in a well greased 10-inch pie pan, forming a ridge around the edge. Cover and let rise in a warm place about 10 to 2o minutes.
Spread meat filling over dough. Bake for thirty (30) minutes, until edge is crisp and light golden brown, then sprinkle cheese, lettuce, tomatoes on top and serve immediately.
