Ingredients:
- 12 oz. boneless chicken breasts
- 1/2 cup sliced green onion
- 2 cloves minced garlic
- 2 tbsp. vinegar
- 2 tbsp. soy sauce
- 1 tbsp. cooking oil
- 1/2 tsp. crushed red pepper
- 1/4 tsp. ground red pepper
- 1/4 tsp. pepper
- 1 tbsp. cooking oil
- 1 tbsp. cornstarch
- 16 oz. Boboli crust
- 1/2 cup Monterey Jack cheese
- 1/2 cup Mozzarella cheese
- 2 tbsp. pine nuts (optional)
Directions:
Preheat oven to 400 degrees. Rinse chicken and pat dry. Cut chicken into 1/2-inch pieces. In a large bowl, combine green onion, garlic, vinegar, soy sauce, 1-tablespoon oil and all the peppers. Add the chicken and stir to coat. Cover and let sit at room temperature for thirty (30) minutes. Drain, reserving marinade.
Out remaining oil in large skillet; add chicken. Cook and stir about three (3) minutes, until brown. Stir cornstarch into marinade; add to skillet and cook until thick and bubbly. Place chicken on Boboli and sprinkle with cheeses and pine nuts. Bake fifteen (15) minutes.
