Chicken Tortilla Soup

Ingredients:

  • 1 teaspoons olive oil
  • 1 cup chopped onion
  • 2 garlic cloves, minced
  • 2 cup shredded cooked chicken breast
  • 1.5 cups frozen corn
  • 1 tablespoon chopped jalapeno pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon worcestershire sauce
  • 1/2 teaspoon chili powder
  • 2 – 14 1/4 oz. cans no salt added chicken broth
  • 1 – 14.5 oz can diced peeled tomatoes, undrained
  • 1 – 10 3/4 oz can condensed reduced fat, reduced sodium, tomato soup, undiluted
  • 1/2 can low-sodium black beans
  • tortilla chip
  • sour cream

Directions:

Heat oil in a dutch oven over medium-high heat. Add onion and garlic and saute for two (2) to three (3) minutes. Stir in chicken and remaining ingredients. Bring to a boil. Reduce heat and simmer one (1) hour. When ready to serve, top with crushed tortilla chips and sour cream if desired.
