Ingredients:
- 1 teaspoons olive oil
- 1 cup chopped onion
- 2 garlic cloves, minced
- 2 cup shredded cooked chicken breast
- 1.5 cups frozen corn
- 1 tablespoon chopped jalapeno pepper
- 1 teaspoon ground cumin
- 1 teaspoon worcestershire sauce
- 1/2 teaspoon chili powder
- 2 – 14 1/4 oz. cans no salt added chicken broth
- 1 – 14.5 oz can diced peeled tomatoes, undrained
- 1 – 10 3/4 oz can condensed reduced fat, reduced sodium, tomato soup, undiluted
- 1/2 can low-sodium black beans
- tortilla chip
- sour cream
Directions:
Heat oil in a dutch oven over medium-high heat. Add onion and garlic and saute for two (2) to three (3) minutes. Stir in chicken and remaining ingredients. Bring to a boil. Reduce heat and simmer one (1) hour. When ready to serve, top with crushed tortilla chips and sour cream if desired.
