Ingredients:
- 4 chicken breasts
- 1 tsp onion salt
- 1 tsp celery salt
- 1/2 lb linguini
- 6 tlbs. butter
- 2 – 4 oz mushrooms
- 2 tbsp. flour
- 1 tbsp. lemon juice
- 1 tbsp. garlic powder
- 1/2 tsp. pepper
- 1 cup whipping cream
- 1/2 lb. cheddar cheese, grated
- 2/3 cup parmesan cheese
- 1/2 cup white wine
Directions:
Simmer chicken, onion, and celery salt in three (3) cups of hot water for 1 1/4 hours. Let cool in water. Bone chicken and reserve two (2) cups broth. Cook linguini all but 5 minutes. Put linguini in a buttered 13 x 9 dish.
Saute mushrooms and garlic in 3 tbsp. butterm sprinkle with lemon juice. Place mushrooms on top of linguini and place chicken pieces on top of mushrooms.
Sauce: 2 tbsp. butter, flour, 1/2 pepper. Add (slowly) 2 cups broth and wine. Cook til thickens. Add grated cheese and whipping cream. Pour over rest and sprinkle with parmesan.
